茶氨酸（L-Theanine）是茶葉中特有的游離氨基酸，茶氨酸是谷氨酸γ-乙基酰胺，有甜味。茶氨酸含量因茶的品種、部位而變動。茶氨酸在干茶中占重量的1%-2%。茶氨酸在化學構造上與腦內活性物質谷酰胺、谷氨酸相似，是茶葉中生津潤甜的主要成份。茶氨酸含量約為新茶的1～2%左右，其含量隨發酵過程減少。
