1.作品質改良劑，有提高食品的絡合金屬離子、pH值、增加離子強度等的作用，由此改善食品的結著力和持水性。中國規定可用于奶酪，最大使用量5g/kg;在西式火腿、肉、魚、蝦和蟹中最大使用量為3.0g/kg;在罐頭、果汁、飲料和奶制品中最大使用量為0.5g/kg。
